Day 2

So had my porridge and coffee and so was feeling fairly full before heading off to a morning meeting.  However this was the scene that awaited me when I arrived:


Of course I couldn't touch any of this (not even the water - was all bottled) and so sat there enviously watching the others help themselves.

Lunch was the first bowl of chicken soup which was terribly thin, but nice and warm and actually did fill me up.


Ended up being late home, but had the great anticipation of some extra flavour in my dinner as we were planning on using our chicken, rice and veg to stuff some peppers.  However, there was even better news awaiting me.  Having prepared the chicken soup the night before and not concentrating hugely well, I had made far to much soup, which means we had extra, and so we treated ourselves to a starter of half a bowl of soup.  This was followed by our highly successful stuffed peppers:


A nice simple recipe too:

  • Shove the chicken wings in the oven while it heats up
  • Cook your rice and veg.
  • In the mean time, cut the tops off your peppers and extract the seeds and white pith.
  • When your rice is cooked, transfer it to a bowl along with the veg.
  • Take out your chicken and strip the meat from the bones and add it to the rice and veg.
  • Stuff the peppers with the mixture, brush the outside with oil, stand on a baking tray with a small amount of water in the bottom and shove in the oven for half an hour.

All in all it was a fairly successful day and hunger didn't feature much, but it is always in the back of my mind that all I have to cope with here is food and veg.  If I had to add in medical bills, travel, bills and everything else it would be impossible!  All the same this is the challenge faced by 1.4 billion people every day.
