So the day started off with a bowl of porridge with my banana chopped up into it to try and inject some flavour and my one cup of coffee for the day. Unfortunately due to my lack of planing it to longer than usual to have breakfast (porridge actually needs to be made, unlike a slice of toast or a yoghurt), meaning I ended up running quite late for work.
To be honest, ignoring the lack of flavour, it was very filling and kept me sustained until lunch, which was a drumstick, potato and veg, again filling enough to last me through the rest of the day, but not to suppress the coffee cravings!
Having forgotten about this week being my Live Below the Line week, I had arranged to meet up with a friend ages ago and so didn't get back home until 8.30. At that point I realised I hadn't prepared our lunches for the next day (chicken soup) and so I embarked on this mission at the same time as making my supper of half a chicken breast mixed with rice and veg.
Although an amazingly simple recipe (boil the chicken carcass, giblets, an onion and a carrot for 2 hours) it does take a long time to make the chicken stock for the soup. Once done with that (10.30pm) I had to strain it, and put it back on to cook with a potato added to thicken the soup. During the half hour that that was cooking I made sure I picked all the remaining chicken off the carcass so as not to waste it. When the stock/potato had cooked for half an hour I finally chucked the whole lot into a blender and wizzed it up to create our soup for the next four days' lunch and then finally sat down at 11.15pm
So my key realisation from the day was the need for planning and careful preparation in order to eat and be able to get a good night's rest, and the lack of flexibility and choice this means for you in the rest of your time unless you go hungry. Am so thankful I only have to do this for 5 days!
